Instructions

  1. Prepare the Masala Mixture: In a bowl, mix amchoor powder, black salt, coriander powder, fennel powder, cumin powder, black pepper, chili powder, turmeric powder, and garam masala powder.

  2. Prepare the Bhindi: Wash the okra and pat dry. Slit them vertically without cutting them into halves completely. Stuff the prepared masala mixture into the slits of the bhindi.

  3. Saute Onions: Heat oil in a kadai over low heat. Add finely chopped onions and sautรฉ until they turn translucent and glossy.

  4. Add Spices: Mix chili powder and turmeric powder in a little water to form a paste. Add this paste to the sautรฉed onions and stir-fry until the water evaporates.

  5. Cook Bhindi: Gently place the stuffed bhindi into the kadai without stirring with a ladle. Cover and cook over medium heat for about 10 minutes until the bhindi is tender.

  6. Add Yogurt: Remove the kadai from the heat and stir in the yogurt and salt. Return the kadai to the fire and cook for an additional 4-5 minutes, stirring occasionally.

  7. Check for Doneness: Remove from heat and check if the bhindi is cooked to your desired tenderness.
