Glazed Prune Cake Recipe

📝 Description: Wonderfully simple, old-fashioned recipe for a very moist and delicious cake. This was my grandmother’s recipe, and four generations have enjoyed it over the years.

Ingredients:

Quantity Ingredient
1 cup Sugar
1 1/2 cups Buttermilk
1 Egg
3 cups Self-rising flour
2 tsp Baking soda
1/2 tsp Nutmeg
1/2 tsp Cinnamon
1 tsp Vanilla extract
1/2 tsp Salt
1 cup Prunes
1 cup Sugar (for glaze)
1 cup Buttermilk (for glaze)
1 tsp Vanilla extract (for glaze)
1/2 tsp Baking soda (for glaze)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 13×9-inch baking pan.

  2. Combine the dry ingredients (sugar, self-rising flour, baking soda, nutmeg, cinnamon, and salt) in a large mixing bowl.

  3. Add the remaining cake ingredients (buttermilk, egg, vanilla extract, and prunes) to the bowl. Mix until well combined.

  4. Pour the batter into the prepared baking pan, spreading it evenly.

  5. Bake in the preheated oven for 50 minutes, or until a toothpick inserted into the center comes out clean.

  6. Meanwhile, prepare the glaze. In a small saucepan, combine the sugar, buttermilk, vanilla extract, and baking soda for the glaze. Cook over medium heat, stirring constantly, until slightly thickened.

  7. Once the cake is done, remove it from the oven. Using a fork, prick holes over the surface of the hot cake.

  8. Pour the warm glaze over the hot cake, allowing it to soak into the holes.

  9. Cover the cake and allow it to cool slightly before serving. This allows the glaze to soak down into the cake, enhancing its flavor and moisture.
