Ingredients:

6 Bacon
1/2 Olive oil
1 Celery
1 Onion
2 cups Chicken broth
2 Potatoes
1 Carrot
1 Tomato
1/8 tsp Black pepper
1 tbsp Cornstarch
1 cup Water
13 oz Canned clams
3 Cod fillets
3/4 lb Shrimp

Instructions:

  1. Begin by preparing the seafood. Cut the crab and fish fillet into bite-sized pieces. Set aside.

  2. Heat a large soup pot over medium-low heat and spray it with nonstick cooking spray. Add the olive oil to the pot.

  3. Add the bacon, celery, and onion to the pot. Cook until the bacon is browned and the onions are tender, stirring occasionally.

  4. Pour in the chicken broth, juice from the canned clams, bottled clam juice, diced potatoes, carrots, tomatoes, and black pepper. Stir to combine.

  5. Cover the pot and simmer the chowder for about 35 minutes or until the potatoes are cooked through and tender.

  6. Once the potatoes are cooked, add the clams, shrimp, crab, and fish fillet to the pot. Cook for an additional 3 minutes or until the fish is cooked through.

  7. In a small bowl, blend the cornstarch with water until smooth. Pour the cornstarch mixture into the chowder, stirring constantly.

  8. Continue to cook and stir the chowder until it thickens to your desired consistency. You may need to add additional cornstarch and water if necessary.

  9. Once thickened, remove the chowder from heat and serve hot.

  10. Garnish with fresh parsley or chives if desired, and enjoy!
