Ingredients:

Ingredients Quantities
Blackberries 9-10 cups
Sugar 6 cups

Cooking Time:

  • Preparation Time: 10 minutes
  • Cook Time: 1 hour
  • Total Time: 1 hour 10 minutes

Instructions:

  1. Clean, de-stem, and crush blackberries. Ensure the blackberries are thoroughly cleaned and any stems are removed. Gently crush the berries to release their juices, but leave some texture for a chunky jam.

  2. In a large stainless steel or enamel pot, combine crushed berries and sugar. The stainless steel or enamel pot helps prevent any reactions with the acidic fruit and ensures a safe cooking process.

  3. Bring to a boil, stirring often until sugar is dissolved. Over medium heat, bring the berry mixture to a rolling boil, stirring constantly to dissolve the sugar completely.

  4. Cook to jell point, stirring often. Continue cooking the mixture until it reaches the jell point, stirring frequently to prevent burning. The jell point is when the mixture thickens and coats the back of a spoon.

  5. Remove from heat, skim off foam, and ladle into clean hot jars. Once the jam reaches the desired consistency, remove it from the heat. Skim off any foam that has formed on the surface, as this can affect the texture of the jam. Carefully ladle the hot jam into clean, sterilized jars, leaving about 1/4 inch of headspace at the top.

  6. Leave 1/4 inch headspace. This headspace allows room for expansion during the sealing process and helps prevent the jars from breaking.

  7. Process in a boiling water bath for 10 minutes at altitudes up to 1000 feet. Place the filled jars in a large pot of boiling water, making sure they are fully submerged. Process the jars for 10 minutes to ensure proper sealing and preservation. Adjust the processing time for higher altitudes as needed.

  8. Cool and store. Once processed, carefully remove the jars from the water bath and allow them to cool completely at room temperature. Check the seals on the jars, ensuring they have properly sealed. Store the jars in a cool, dark place for up to a year. Once opened, store any remaining jam in the refrigerator.

Enjoy your homemade Blackberry Jam spread on toast, mixed into yogurt, or used as a filling for your favorite desserts. Share with friends and family or save for yourself to savor the delicious taste of summer all year long! 🍇🍞🍯
