Psari Plaki (Greek Red Snapper) Recipe

Ingredients:

2 Onions
2 1/2 Tomatoes
1/2 cup Fresh parsley
1/2 cup Dry white wine
1/8 tsp Pepper
4 Bay leaves
2 Garlic cloves
8 Red snapper fillets
1 1/2 tbsp Fresh lemon juice
1/2 tsp Salt
4 Baking potatoes
1 tbsp Olive oil
1/4 tsp Salt
8 Tomatoes
8 Green bell peppers

Instructions:

  1. Preheat your oven to 350°F (175°C).

  2. Heat 1 tablespoon of olive oil in a large nonstick skillet over medium heat.

  3. Add onions to the skillet and sauté for about 7 minutes or until tender.

  4. Stir in chopped tomatoes, fresh parsley, dry white wine, pepper, bay leaves, and garlic cloves. Reduce heat and let it simmer, uncovered, for 15 minutes or until the liquid evaporates, stirring occasionally. Set aside.

  5. Arrange the red snapper fillets in a 13×9-inch baking dish coated with cooking spray.

  6. Sprinkle lemon juice and 1/2 teaspoon of salt over the fillets, then top them with the onion mixture.

  7. Place potato wedges over the onion mixture and drizzle them with 1 tablespoon of olive oil and 1/4 teaspoon of salt.

  8. Top with tomato slices and bell pepper rings.

  9. Bake the dish, uncovered, at 350°F (175°C) for 1 hour and 20 minutes or until the potatoes are tender.

  10. Divide one fillet and 6 potato wedges onto each of 8 plates.

  11. Evenly distribute the onion mixture among each serving and top each serving with 1 tomato slice and 1 bell pepper ring.
