Ingredients:

1 Cornstarch
2 tbsp Water
1/2 cup Fresh parsley
1/4 cup Fresh basil leaves
2 cloves Garlic
1 tbsp Fresh lemon rind
1 tsp Dijon mustard
1/4 tsp Salt
1/8 tsp Fresh ground black pepper

Instructions:

  1. Prepare the Base:

    • Combine the low sodium chicken broth, cornstarch, and water in a small saucepan, stirring well to ensure the ingredients are thoroughly mixed.
  2. Cook the Mixture:

    • Place the saucepan over medium-high heat and cook the mixture, stirring constantly, until it reaches a boil.
    • Continue cooking for an additional minute or until the mixture has thickened, then remove it from the heat.
  3. Temper the Egg Yolk:

    • Gradually add about 1/4 of the hot mixture into the egg yolk, stirring constantly to temper it.
    • Once tempered, add the egg yolk mixture back into the remaining hot mixture in the saucepan, stirring constantly.
  4. Thicken the Aioli:

    • Return the saucepan to low heat and cook the mixture, stirring constantly, until it thickens to your desired consistency.
  5. Prepare the Herb Mixture:

    • In a food processor, combine the fresh parsley and basil leaves, pulsing until finely chopped.
    • Add the garlic, lemon rind, and Dijon mustard to the herb mixture, and process until smooth.
  6. Combine and Chill:

    • Transfer the cooled broth mixture to a small bowl, then add the herb mixture, stirring well to combine.
    • Season the aioli with salt and pepper to taste.
    • Cover the bowl and chill the aioli thoroughly in the refrigerator.
