Ingredients:

  • 1 cup white vinegar
  • 6 cups demerara sugar
  • 5 apples, peeled, cored, and chopped
  • 4 tbsp ginger, finely chopped
  • 4 cloves garlic, minced
  • 1 tsp cayenne pepper
  • 1 tsp salt
  • 2 cups craisins (dried cranberries)

Instructions:

  1. Heat Vinegar and Sugar: In a large saucepan, heat the white vinegar and demerara sugar over medium heat, stirring constantly until the sugar is completely melted.

  2. Add Ingredients: Once the sugar has melted, add the chopped apples, finely chopped ginger, minced garlic, cayenne pepper, salt, and craisins to the saucepan.

  3. Bring to a Boil: Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer gently.

  4. Simmer: Allow the mixture to simmer for approximately 3 to 4 hours, stirring occasionally. The chutney should darken in color and achieve a thick, jam-like consistency.

  5. Remove Chili Bag: If you’ve used a chili bag, remove it after 30 minutes of simmering to avoid making the chutney too spicy.

  6. Sterilize Jars: While the chutney is simmering, sterilize your jars and lids by boiling them in a large pot of water for 10 minutes. Remove them with sanitized tongs and let them air dry.

  7. Jar and Seal: Once the chutney has reached your desired consistency, carefully ladle it into the sterilized jars, leaving about 1/4 inch of space at the top. Wipe the rims of the jars with a clean, damp cloth to remove any residue. Place the lids on the jars and tighten them securely.

  8. Cool and Store: Allow the jars of chutney to cool completely at room temperature before storing them in a cool, dark place. Properly sealed jars can be stored for up to a year.
