  • 1 poblano chili

Instructions:

Step Description
1 In a small pan, bring the chicken broth to a simmer.
2 Set a large pan over medium heat. Add oil, then add the rice and onion. Cook, stirring occasionally, until both the rice and onion are light brown, approximately 10 minutes.
3 Mix in the garlic and cook for an additional 2 minutes.
4 Add the pureed tomatoes and chicken broth to the pan with the rice and onion. Also, add the optional ingredients (corn, poblano chili, bell pepper). Scrape the rice down and stir well to combine.
5 Reduce the heat to medium-low, cover the pan, and allow the rice to finish cooking for approximately 20 minutes, or until the liquid is absorbed and the rice is tender.
