  2. Choose Appropriate Potatoes: Select small potatoes that will easily fit inside wide-mouth canning jars. Avoid using mayo jars as they may not be suitable for canning.

  3. Boil Potatoes: In a large pot, bring water to a boil and add the prepared potatoes. Boil them for approximately 10 minutes until they are partially cooked. Once done, drain the potatoes and set them aside.

  4. Prepare Jars: Assemble your canning jars and ensure they are clean and sterilized. Add 1 teaspoon of salt to each quart jar, distributing it evenly among the jars.
