Prepare pudding batter: In a mixing bowl, beat together the sugar, egg, butter, and jam until the mixture becomes pale and fluffy.

Combine dry ingredients: In a separate bowl, sift together the cake flour, bicarbonate of soda, and salt.

Mix wet ingredients: In another bowl, mix the milk, vinegar, and vanilla essence.

Combine mixtures: Alternating between the flour mixture and the milk mixture, fold them into the egg mixture until well incorporated.

Prepare baking dish: Butter a large baking dish and pour the batter into it. Cover the dish with foil, shiny side down.
