Instructions:
-
Prepare the Puree: - Blend together the onions, garlic, ginger, tomatoes, green chilies, salt, and turmeric until you achieve a smooth paste consistency. Set aside.

-
Cooking Process: - Heat oil in a non-stick skillet over medium heat, then add the cloves and let them sizzle for about 10 seconds.
- Quickly add the prepared puree to the skillet and sauté for 2-3 minutes until the raw aroma dissipates, and the oil starts separating from the sides of the skillet.

-
Adding Potatoes: - Incorporate the potatoes into the skillet, followed by 2 cups of water. Mix well to combine all the ingredients.

-
Simmering: - Reduce the heat to low and let the curry simmer for approximately 15 minutes or until the potatoes are tender and cooked through.

-
Garnish and Serve: - Once cooked, garnish the curry with freshly chopped coriander leaves for a burst of fresh flavor.
- Serve the Aloo Curry warm alongside rice, Indian roti, paratha, or any other bread of your choice.

Tips:
- For a richer flavor, you can add a splash of coconut milk or cream towards the end of cooking.
- Adjust the spiciness according to your preference by increasing or decreasing the amount of green chilies.
- This dish tastes even better the next day as the flavors have had time to meld together, making it a perfect option for meal prep or leftovers.
