These delightful bean ‘n cheese stuffed wrappers are perfect as an appetizer or as part of a meal. They’re reminiscent of a burrito but with a lighter twist, especially when made with Spring Roll Wrappers. Baking them instead of frying adds a healthier touch to this scrumptious recipe.

Ingredients:

  • 12 Spring Roll Wrappers
  • 3/4 cup shredded jalapeno jack cheese
  • 3/4 cup shredded monterey jack cheese
  • 3/4 cup shredded cheddar cheese
  • 1/2 cup refried beans
  • 2 1/2 tbsp vegetable oil
  • Water (for sealing)

Instructions:

  1. Prepare the Filling: In a mixing bowl, combine the shredded jalapeno jack cheese, shredded monterey jack cheese, and shredded cheddar cheese. Mix well.
  2. Assemble the Wrappers: Lay out the spring roll wrappers on a clean work surface. Place a generous 1/2 cup of the cheese mixture in the center of each wrapper. Add 1 1/2 tablespoons of refried beans on top of the cheese.
  3. Roll the Wrappers: To roll each wrapper, start by having a corner of the wrapper facing towards you. Fold in the two sides, then moisten the edges with water using your finger. Bring up the far corner and seal it with water. Roll the wrapper by folding the bottom edge towards the corner that is sticking out, sealing the flap with water as you go. Think of it like rolling the bottom of an envelope towards the flap.
  4. Storage Option: At this point, you can either store the wrapped wrappers in a plastic bag in the fridge until you’re ready to cook them, or proceed with cooking immediately.
  5. Frying Method: If frying, heat vegetable oil in a pan until hot. Test by dipping a corner of the wrapper into the oil – it should sizzle. Fry the wrappers on one side until golden brown, then flip and cook until both sides are golden.
