Ingredients:

1/3 cup Cheddar cheese
1 1/2 cups Ricotta cheese
1/2 cup Milk

3/4 cup Parmesan cheese

Instructions:

  1. Preparation:

    • Heat oil in a pan and fry the brinjal (eggplant) until lightly browned. Drain excess oil on kitchen paper.
    • Add onion, garlic, and mushrooms to the pan. Add more oil if necessary. Cook until the onion is soft.
  2. Prepare the Sauce:

    • In a pot, combine tomatoes, red wine, and stock. Simmer for 15 minutes or until thickened.
    • Stir in the brinjal and onion mushroom mixture.
  3. Cook the Pasta:

    • Cook the pasta until tender, then drain.
  4. Assemble the Dish:

    • Combine the cooked pasta with half of the brinjal mixture.
    • Spread the pasta mixture into a large ovenproof dish.
    • Top with the remaining brinjal mixture.
  5. Prepare the Sauce:

    • In a separate bowl, combine ricotta cheese, eggs, milk, and half of the cheddar cheese. Mix well.
    • Spread this sauce evenly over the brinjal mixture in the dish.
  6. Bake:

    • Sprinkle the remaining cheddar cheese and Parmesan cheese on top.
    • Bake at 180Β°C (350Β°F) for 40 minutes, or until the cheese is golden and bubbly.
