Ingredients:

  • 2 red peppers
  • 1 piece of ginger root
  • 1/2 cup sun-dried tomatoes
  • 250g cream cheese

Instructions:

1 Cut the red peppers in half lengthways.
2 Remove the seeds and stems from the peppers.
3 Place the pepper halves cut-side down on an oven tray and grill until the skins are blistered and brown.
4 Remove the peppers from the oven and wrap them in foil. Let them cool.
5 Once cooled, remove the skin from the peppers.
6 In a food processor, combine the pepper halves, ginger, and sun-dried tomatoes.
7 Add the cream cheese to the food processor and process until a smooth paste forms.
8 Transfer the mixture to a dish and chill until needed.
