Instructions:
- In a heavy (cast iron is best) Dutch oven, heat oil over medium heat.
- Add onion and garlic, cooking for about 5 minutes until soft and fragrant.
- Add the remaining ingredients except for carrots, celery, and lemon slices.
- Bring the mixture to a boil.
- Reduce the heat to low, covering the pot.
- Allow the soup to simmer for 1 1/4 hours.
- Add carrots and celery to the pot.
- Bring the soup back to a boil, then reduce the heat and simmer uncovered for 40 minutes.
- Remove the pot from the heat.
- Lift out the ham hocks and bay leaf, discarding the bay leaves.
- Allow the ham hocks to cool slightly, then remove any fat and bones.
- Return the meat to the soup, stirring gently and heating through.
- To serve, float a lemon slice on top of each portion.
