Ingredients:

- 1/4 cup milk
- 3/4 cup light corn syrup
- 2 tablespoons butter
- 1/4 cup butter
- 2 cups pecans
- 8 caramels
- 3/4 teaspoon vanilla extract

Bring to Boil: Over medium-low heat, bring the mixture to a boil, stirring constantly until the sugar dissolves. This should take approximately 6-8 minutes. Then, add 1/4 cup of butter to the mixture.

Boil Covered: Cover the saucepan and allow the mixture to boil for 3 minutes over medium heat.

Cook Uncovered: Uncover the saucepan and continue cooking the mixture without stirring until a candy thermometer registers 238 degrees Fahrenheit, which should take about 14 minutes. At this point, add the remaining 2 tablespoons of butter, caramels, pecans, and vanilla extract. Do not stir.

Cool Mixture: Let the mixture cool to 130 degrees Fahrenheit, which should take approximately 25 minutes.

Beat Fudge: Once cooled to the desired temperature, beat the fudge by hand with a wooden spoon until it thickens and begins to lose its gloss. This should take about 10 minutes.
