Ingredients:

  • 2 cups sugar
  • 1/4 cup milk
  • 3/4 cup light corn syrup
  • 2 tablespoons butter
  • 1/4 cup butter
  • 2 cups pecans
  • 8 caramels
  • 3/4 teaspoon vanilla extract

Instructions:

  1. Prepare Pan: Line a 9-inch pan with aluminum foil, ensuring to extend the foil over the edges of the pan. Butter the foil to prevent sticking.

  2. Prepare Saucepan: Butter the inside of a heavy 3-quart saucepan to prevent the mixture from sticking.

  3. Mix Ingredients: In the buttered saucepan, combine sugar and cocoa, stirring well to ensure they are evenly mixed.

  4. Add Milk and Corn Syrup: Stir in the milk and corn syrup until well combined.

  5. Bring to Boil: Over medium-low heat, bring the mixture to a boil, stirring constantly until the sugar dissolves. This should take approximately 6-8 minutes. Then, add 1/4 cup of butter to the mixture.

  6. Boil Covered: Cover the saucepan and allow the mixture to boil for 3 minutes over medium heat.

  7. Cook Uncovered: Uncover the saucepan and continue cooking the mixture without stirring until a candy thermometer registers 238 degrees Fahrenheit, which should take about 14 minutes. At this point, add the remaining 2 tablespoons of butter, caramels, pecans, and vanilla extract. Do not stir.

  8. Cool Mixture: Let the mixture cool to 130 degrees Fahrenheit, which should take approximately 25 minutes.

  9. Beat Fudge: Once cooled to the desired temperature, beat the fudge by hand with a wooden spoon until it thickens and begins to lose its gloss. This should take about 10 minutes.

  10. Spread in Pan: Quickly spread the fudge into the prepared pan and let it cool for about 3 hours.

  11. Cut into Shapes: Once the fudge has cooled completely, lift it out of the pan using the foil, peel off the foil, and place the fudge on a cutting board. Cut the fudge into desired shapes using a 2-inch cookie cutter or into 1 1/2-inch squares.
