Lambs Fry Recipe

Ingredients:

  • 1/2 lb lamb liver
  • 1/2 cup flour
  • 1/4 onion
  • 1 garlic clove
  • 1 red capsicum (bell pepper)
  • Salt, to taste
  • Water
  • Pepper, to taste
  • 1 1/2 tsp paprika
  • 2 tbsp Worcestershire sauce
  • 1 tomato paste
  • 2 cups sauerkraut
  • 100g noodles
  • 2 tbsp oil (for frying)

Instructions:

  1. Prepare Liver:

    • Clean the liver and remove the outer membrane gently with your fingers to ensure tenderness.
    • Slice the liver into 1-centimeter (1/2 inch) thick slices.
  2. Coat Liver:

    • Place the flour and sliced livers in a plastic bag, then shake to coat the livers evenly with flour. Remove the livers and shake off any excess flour.
  3. Fry Liver:

    • Heat oil in a frying pan over medium heat.
    • Fry the coated liver slices for about 1 minute on each side until golden brown.
    • Remove the fried livers and place them on a paper towel to drain excess oil.
  4. Prepare Sauce:

    • In a separate frying pot, sauté the onion, garlic, and red capsicum until the onion becomes soft.
    • Add the stock along with the remaining ingredients (except noodles and sauerkraut) to the pot.
    • Bring the mixture to a boil, then reduce the heat to medium.
    • Add the fried livers to the pot and cook for about 5 minutes or until the livers are tender.
    • If the sauce needs thickening, mix 1/4 cup of water with 1 teaspoon of corn flour, then add it to the sauce and let it cook for another minute or two.
  5. Prepare Noodles:

    • Boil the noodles in a pot according to package instructions (usually takes about 5 minutes). Drain the cooked noodles in a colander.
  6. Fry Noodles and Sauerkraut:

    • In the same pot or wok used for boiling noodles, heat 1 tablespoon of oil until it starts smoking.
    • Add the boiled noodles and sauerkraut to the pot and fry for about 5 minutes, stirring occasionally.
  7. Serve:

    • Serve the fried lamb liver with noodles, and pour the prepared sauce on top for added flavor.
    • If you prefer, you can also serve the dish with mashed potatoes instead of noodles for a comforting alternative.
