Ingredients:
- 5 hot red chili peppers
- 10 lemons
- 1 cup raspberry vinegar (or white wine vinegar, or plain vinegar)
- 5 teaspoons coarse salt
- 1 pepper mixture
- 2 cups sugar
- 3 cans of peaches (large size, 796 mL/28 oz each)
Instructions:
Step | Description |

1 | Put hot red chili peppers, seeds and all, in a food processor and pulse until medium chopped. |
2 | Aim for a yield of 15 cups of chopped peppers. |
3 | Drain the five tins of peaches thoroughly and chop them into small pieces. |
4 | Place the chopped peaches in a large preserving kettle along with the raspberry vinegar (or your choice of vinegar), coarse salt, and pepper mixture. |
5 | Add lemon halves to the mixture. |
6 | Bring the mixture to a boil and simmer gently for 30 minutes, stirring occasionally. |
7 | Remove the lemon halves from the mixture. |
8 | Stir in the sugar until well combined. |
9 | Continue to boil the mixture for an additional 30 minutes, or until it thickens, stirring occasionally. |
10 | Once thickened, bottle the relish in sterilized jars and seal them tightly. |
11 | Optionally, process the jars in a hot water bath for preservation. |
12 | Your Peach and Pepper Relish is now ready to be enjoyed or gifted! This recipe yields approximately 9 pints of relish. |
