Mean Chef’s Blackberry Cobbler

Ingredients:

Blackberries 8 cups
Lemon Juice 3 tablespoons
Butter 3/4 cup

Baking Powder 4 teaspoons

Butter 1/2 cup
Milk 2/3 cup
Egg 1

Instructions:

  1. Preheat Oven:

    • Preheat your oven to 350°F (175°C).
  2. Prepare Baking Dish:

    • Grease a 13×9 inch baking dish.
  3. Mix Dry Ingredients:

    • In a large bowl, mix together 1 1/2 cups of sugar, 1/2 cup of flour, and 1 teaspoon of salt.
  4. Combine with Berries:

    • Add the dry mixture to the blackberries and lemon juice, mixing well to coat the berries.
  5. Transfer to Baking Dish:

    • Pour the blackberry mixture into the prepared baking dish, and dot the top with 3/4 cup of butter.
  6. Bake:

    • Place the baking dish in the preheated oven and bake until the mixture is hot and bubbly.
  7. Prepare Topping:

    • Prepare the topping just before you’re ready to put it on the cobbler.
    • In a separate bowl, mix together 2 cups of flour, 4 teaspoons of baking powder, 3 tablespoons of sugar, and 1 teaspoon of salt.
    • Cut in 1/2 cup of butter until the mixture resembles coarse meal. This can be done by hand or in a food processor.
  8. Mix Wet Ingredients:

    • In another bowl, whisk together 2/3 cup of milk and 1 egg.
  9. Combine Wet and Dry:

    • Stir the milk and egg mixture into the dry ingredients until just blended.
  10. Add Topping:

    • Spoon the topping mixture onto the hot berry mixture in dollops.
  11. Return to Oven:

    • Return the baking dish to the oven and continue baking until the biscuits are golden brown and cooked through.
  12. Serve:
