1 Bulgur
1 Boiling water
1 Olive oil
2 Onions
3 Garlic cloves
1/2 Salt
2 Cumin
1 1/2 Basil
Black pepper
Cayenne
1 Bell pepper
3/4 Dried soybeans
1 Tomatoes
3 Tomato paste
1/2 Fresh parsley
1 1/2 – 2 Feta cheese

📝 Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Lightly oil a 9×13″ baking pan.
  3. Place bulgur in a small bowl.
  4. Add boiling water, cover with a plate, and let stand for at least 15 minutes.
  5. Meanwhile, heat olive oil in a large skillet.
  6. Add onions, garlic, salt, and seasonings. Saute over medium heat for 5 to 8 minutes, stirring occasionally.
  7. Add bell pepper and saute for about 5 minutes more.
  8. Drain soybeans and place them in a blender with 1 cup of fresh water. Grind until they resemble a coarse batter.
  9. Transfer the soybean mixture to a large bowl.
  10. Add the soaked bulgur and sauteed vegetables to the soybeans.
  11. Stir in tomatoes, breaking them into bite-sized pieces.
  12. Add tomato paste, parsley, and 1 cup of the feta cheese. Mix well.
  13. Spread the mixture into the prepared baking pan and sprinkle the remaining feta on top.
  14. Cover and bake for 30 minutes at 375°F (190°C), then uncover and bake for an additional 15 minutes at 350°F (175°C).
  15. Serve hot and enjoy the delightful flavors of Scheherazade Casserole!
