Description:

Ingredients:

  • 1 package vanilla pudding mix
  • 2 cups milk
  • 1/2 cup sweetened flaked coconut
  • 1 can crushed pineapple, drained
  • 1/4 cup water
  • 1 tablespoon butter
  • Pinch of salt
  • 1 tablespoon sugar
  • 1/2 cup all-purpose flour
  • 3 large eggs
  • 1 cup confectioners’ sugar
  • 1 tablespoon water (for icing)
  • Additional sweetened flaked coconut for garnish

Instructions:

  1. Prepare the Pudding Filling:

    • Cook the vanilla pudding mix according to the package instructions, using the milk.
    • Transfer the cooked pudding to a medium bowl and cover the surface with plastic wrap.
    • Chill the pudding in the refrigerator for at least 4 hours.
  2. Prepare the Cream Puff Dough:

    • In a saucepan over medium-low heat, combine water, butter, salt, and sugar. Heat until the butter melts.
    • Remove from heat and stir in the flour all at once, beating with a wooden spoon until smooth.
    • Return the saucepan to heat and cook the dough, stirring constantly, until it forms a smooth mass and pulls away from the sides of the pan (about 12-15 minutes). The dough should look slightly dry.
    • Make a well in the center of the dough and add the eggs, one at a time, beating vigorously with the wooden spoon until each egg is fully incorporated and the dough becomes smooth again.
  3. Shape and Bake the Cream Puffs:

    • Preheat your oven to 425ยฐF (220ยฐC).
    • Using a lightly buttered baking sheet, scoop 1/4 cup portions of dough onto the sheet, forming 6 mounds.
    • Top each mound with 1 tablespoon of the remaining dough.
    • Bake the cream puffs in the preheated oven until they are puffed and golden brown, about 20-25 minutes.
    • After baking, make a small slit in each puff where the bottom connects with the top.
    • Return the puffs to the oven for an additional 10 minutes, then allow them to cool on wire racks.
  4. Assemble the Cream Puffs:

    • Once cooled, use a serrated knife to cut the tops off of each cream puff.
    • Remove any moist dough from inside the puffs.
    • Fill each puff with the chilled pudding mixture and replace the tops.
  5. Prepare the Coconut Icing:

    • In the bowl of an electric mixer, combine the confectioners’ sugar and 1 tablespoon of water. Beat until smooth.
    • Drizzle the icing over the tops of the filled cream puffs.
    • Sprinkle additional sweetened flaked coconut over the icing for garnish.
