Ingredients:

  • 3 chicken breasts
  • 3/4 cup milk
  • 3 canned chipotle chiles
  • 6 cloves garlic
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 2 tablespoons butter
  • 1 1/2 tablespoons all-purpose flour
  • 1/2 cup heavy cream
  • 1/4 cup sour cream
  • 8 ounces queso cheese, grated
  • Additional minced chipotle chiles for garnish (optional)

Instructions:

Step Description
1 Preheat oven to 350 degrees F (175 degrees C).
2 Place chicken breasts in an ovenproof baking dish and bake in the preheated oven for 25 minutes.
3 While the chicken is baking, prepare the chipotle cream sauce. In a blender or food processor, combine milk, canned chipotles, garlic, ground cumin, onion powder, and salt. Blend until smooth.
4 In a large skillet, melt butter over medium heat. Add all-purpose flour and cook, stirring constantly, until smooth and bubbly.
5 Gradually add heavy cream and sour cream to the skillet, whisking continuously until the mixture is smooth and thickened.
6 Stir in the chipotle puree and continue to cook, stirring constantly, until the mixture comes to a boil and thickens further. Remove from heat.
7 Once the chicken has baked for 25 minutes, remove it from the oven and drain any excess fat.
8 Pour the prepared chipotle cream sauce over the chicken in the baking dish.
9 Sprinkle the grated queso cheese evenly over the top of the chicken and sauce.
10 Return the baking dish to the oven and bake for an additional 20 minutes, or until the cheese is melted and just begins to brown.
11 Remove the chicken from the oven and let it rest for a few minutes before serving.
12 Serve the Southwest Chicken with Chipotle Cream hot, spooning extra sauce over each portion. Garnish with minced chipotle chiles if desired.
