Ingredients:

  • 1 boneless pork loin

  • 1 tbsp red currant jelly
  • 1 tbsp black currant jelly

Instructions:

    • In a bowl, combine dry sherry, soya sauce, minced garlic, dry mustard, grated gingerroot, fresh thyme, dried thyme, red currant jelly, and black currant jelly. Mix well.
    • Pour the marinade over the pork roast in the bag.
    • Press out any air, tie it up with a twist-tie or elastic band, and place it in a large bowl. Stash it in your fridge.
    • Marinate for about 6 hours, occasionally squishing the bag to ensure all the meat gets in contact with the marinade. You can marinate for 3 to 4 hours if needed.
  2. Roast the Pork:

    • Preheat your oven to 325°F (160°C).
    • Remove the pork roast from the bag, discarding the marinade.
    • Place the roast on a rack in a roasting pan.
    • Roast the pork until it reaches an internal temperature of 170°F (75°C) and the juices run clear, about 3 hours.
    • Let the roast stand for about 15 minutes before carving to allow the juices to settle back into the meat.
  3. Prepare the Sauce:

    • While the pork is resting, prepare the sauce.
    • In a small saucepan, combine the remaining dry sherry, soya sauce, and grated gingerroot.
    • Heat over medium heat until the jelly melts and the sauce is heated through.
    • Stir well.
  4. Serve:

    • Slice the pork roast and serve with the prepared sauce on the side.
    • Garnish with fresh thyme sprigs, if desired.
