Instructions:

  1. Prepare the Rice:

    • Wash the rice thoroughly several times, then soak it in water for about 30 minutes.
  2. Preheat the Oven:

    • Preheat your oven to a very high temperature of 500°F (260°C). Adjust if your oven tends to be less powerful.
  3. Prepare the Pot:

    • Grease a large, tall oven pot with butter, ensuring to coat the bottom and sides generously.
    • Place the remaining butter in the pot and allow it to melt completely in the preheated oven.
  4. Prepare the Rice Mixture:

    • Drain the soaked rice and transfer it to a mixing bowl.
    • Add salt and pepper to the rice, stirring well to combine.
  5. Layering in the Pot:

    • Transfer the seasoned rice into the greased oven pot, spreading it evenly across the bottom.
    • Pour the milk over the rice, ensuring it’s completely submerged.
  6. Cooking Process:

    • Place the pot in the hot oven and cook at 500°F (260°C) for approximately 15 minutes, or until the mixture starts to boil.
    • Reduce the oven temperature to 300°F (150°C) and continue cooking for another 25 minutes or until the rice is fully cooked.
    • Check the rice’s doneness by inserting a knife into the center; if it comes out clean, the rice is cooked. If not, continue cooking, checking every 5 minutes.
  7. Optional Addition:

    • While the rice is cooking, you can boil small pieces of lamb or chicken separately. Add them to the rice before cooking for an extra flavor boost.
  8. Serving:

    • Once cooked, Tagen Ros Mo-amar can be enjoyed hot or cold.
    • For a delicious serving suggestion, heat the dish before serving and accompany it with a fresh tomato and cucumber salad.

Enjoy this flavorful Egyptian-African dish that’s both comforting and easy to prepare!
