Ingredients

  • 1 tbsp olive oil
  • 6 boneless skinless chicken breast halves
  • 1 baby red potato
  • 3 shallots
  • 1/2 onion
  • 2 cups broth
  • 5 leeks
  • 1 carrot
  • 1/4 red bell pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup balsamic vinegar

Instructions

Step Description
1 In a large skillet, heat olive oil over medium-high heat.
2 Add the chicken and cook, turning, until golden brown on the outside and white throughout, about 10 minutes.
3 Remove the chicken to a plate.
4 Add potatoes and shallots to skillet and cook, stirring often, 2 to 3 minutes, until the shallots are soft.
5 Stir in the broth, scraping and loosening the brown bits on the bottom of the pan.
6 Add the leeks, carrots, and red pepper. Heat to boiling.
7 Reduce heat to medium-low and simmer for about 8 minutes, until the potatoes are tender.
8 Stir in the garlic powder, salt, pepper, and balsamic vinegar. Heat to boiling.
9 Return the chicken to the pan, spoon the sauce over the chicken, and cook over low heat for 2 to 3 minutes to heat through.
