Ingredients:

  • 1 onion
  • 1 carrot
  • 1 cup white wine

  • 2 green chili peppers
  • 1 red chili pepper
  • 1 shallot
  • 12 basil leaves
  • 1 lime
  • 1 lemon
  • 1 bunch fresh dill
  • 8 flat-leaf parsley sprigs
  • 6 black peppercorns
  • 4 bay leaves
  • Extra virgin olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions:

1. Prepare the Bouillon:

  1. In a large pan, combine chopped onion, carrot, and parsley.
  2. Add 1 liter of water, white wine, capers, peppercorns, bay leaf, and a pinch of salt.
  3. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes to infuse the flavors.

2. Create the Salsa Verde:

  1. While the bouillon simmers, prepare the salsa verde.
  2. Rinse the capers and pat them dry.
  3. In a food processor, combine the capers, green and red chili peppers, shallot, basil leaves, gherkins, dill, and zest from the lemon or lime.
  4. Chop the parsley leaves until you have approximately 4 tablespoons and add them to the processor.
  5. Season with salt and pepper.
  6. Blitz the ingredients until finely chopped, then gradually add olive oil while the motor is running until a thick, pesto-like consistency forms. Scrape down the sides of the bowl as needed.

3. Poach the Haddock:

  1. Approximately ten minutes before serving, strain the fresh bouillon into a large, deep frying pan.
  2. Bring the bouillon to a boil, then gently place the haddock fillets into the pan.
  3. Poach the fish until just cooked through, which typically takes as little as three minutes, depending on the thickness of the fillets.

4. Serve:

  1. Carefully transfer the cooked haddock onto warmed plates.
  2. Spoon the vibrant salsa verde generously over the fish.
