Ingredients:
- 1 onion
- 1 carrot
- 1 cup white wine
- 6 capers
- 2 green chili peppers
- 1 red chili pepper
- 1 shallot
- 12 basil leaves
- 1 lime
- 1 lemon
- 1 bunch fresh dill
- 8 flat-leaf parsley sprigs
- 6 black peppercorns
- 4 bay leaves
- Extra virgin olive oil
- Salt, to taste
- Pepper, to taste
Instructions:
1. Prepare the Bouillon:
- In a large pan, combine chopped onion, carrot, and parsley.
- Add 1 liter of water, white wine, capers, peppercorns, bay leaf, and a pinch of salt.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes to infuse the flavors.
2. Create the Salsa Verde:
- While the bouillon simmers, prepare the salsa verde.
- Rinse the capers and pat them dry.
- In a food processor, combine the capers, green and red chili peppers, shallot, basil leaves, gherkins, dill, and zest from the lemon or lime.
- Chop the parsley leaves until you have approximately 4 tablespoons and add them to the processor.
- Season with salt and pepper.
- Blitz the ingredients until finely chopped, then gradually add olive oil while the motor is running until a thick, pesto-like consistency forms. Scrape down the sides of the bowl as needed.
3. Poach the Haddock:
- Approximately ten minutes before serving, strain the fresh bouillon into a large, deep frying pan.
- Bring the bouillon to a boil, then gently place the haddock fillets into the pan.
- Poach the fish until just cooked through, which typically takes as little as three minutes, depending on the thickness of the fillets.
4. Serve:
- Carefully transfer the cooked haddock onto warmed plates.
- Spoon the vibrant salsa verde generously over the fish.
