Instructions:

  1. Prepare the Potatoes:

    • Boil the new potatoes in salted water until just tender.
    • Drain the potatoes and use a potato masher to crush them into a creamy consistency.
  2. Prepare the Meat and Vegetable Mixture:

    • Heat oil and 10g of butter in a large frying pan over medium heat.
    • Once the butter has melted, add the bacon, stirring to separate the pieces.
    • Add the chopped red onion, minced garlic, bay leaf, and fresh thyme leaves to the pan.
    • Cook for approximately five minutes until fragrant.
    • Incorporate the sliced leeks and celery into the pan, seasoning with salt and pepper to taste.
    • Reduce the heat, cover the pan, and cook for about 10 minutes until the leeks are tender.
  3. Combine Meat with Vegetables:

    • Stir in the diced chicken or beef into the vegetable mixture.
    • Add half of the chopped parsley and 50g of breadcrumbs, mixed with milk, into the pan.
    • Increase the heat and stir as the meat changes color.
    • Let the mixture simmer for approximately 15 minutes, adding the remaining parsley towards the end of the cooking process.
  4. Assemble the Dish:

    • Spoon the meat and vegetable mixture into a casserole dish, spreading it evenly.
    • Top the mixture with the crushed potatoes, creating a smooth layer.
  5. Add Toppings:

    • Combine the Gruyere cheese with the remaining breadcrumbs.
