Quantity Ingredient
1/2 cup Shortening
3/4 cup Honey
1 Egg
1 cup Whole wheat flour
1 cup Refined flour
1 cup Flour
1 tsp Baking soda
1 tsp Ground cinnamon
1 tsp Ground nutmeg
1/2 tsp Salt
1 cup Zucchini, grated
1 cup Oatmeal
1 cup Raisins

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).

  2. Cream Shortening & Honey: In a mixing bowl, cream together the shortening and honey until well combined.

  3. Add Egg: Add the egg to the creamed mixture and beat well.

  4. Prepare Dry Ingredients: In a separate bowl, stir together the baking soda, cinnamon, nutmeg, and salt.

  5. Combine Wet & Dry Mixtures: Gradually add the dry mixture alternately with the grated zucchini to the egg mixture. Stir until everything is well combined.

  6. Add Oatmeal & Raisins: Stir in the oatmeal and raisins until they are evenly distributed throughout the dough.

  7. Drop on Cookie Sheets: Using teaspoons, drop the cookie dough onto greased cookie sheets, spacing them a couple of inches apart.

  8. Bake Cookies: Place the cookie sheets in the preheated oven and bake for 10 to 12 minutes, or until the cookies are lightly golden brown.

  9. Cool & Enjoy: Once baked, remove the cookies from the oven and allow them to cool on the cookie sheets for a few minutes. Then transfer them to a wire rack to cool completely.

  10. Serve & Share: These Zucchini Oatmeal Cookies are delightful when enjoyed warm with a glass of milk or a cup of tea. They also make excellent gifts for friends and family!

Recipe Notes:

  • Zucchini Tip: Make sure to properly squeeze out excess moisture from the grated zucchini before adding it to the cookie dough. This helps prevent the cookies from becoming too moist.

  • Storage: Store any leftover cookies in an airtight container at room temperature for up to a week. You can also freeze the cookies for longer storage.

  • Customization: Feel free to customize these cookies by adding chopped nuts, chocolate chips, or even a sprinkle of flaky sea salt on top before baking.

These Zucchini Oatmeal Cookies are a wonderful way to sneak in some veggies while enjoying a delicious treat. Whether for a quick snack or a sweet ending to a meal, these cookies are sure to be a hit with everyone! 🌟 Enjoy baking and sharing the love! ❤️
