Instructions:
- In a blender, whiz up the lemon juice, Worcestershire sauce, Tabasco sauce, minced garlic cloves, anchovy paste, and Parmesan cheese until smooth.
- Slowly drizzle olive oil into the blender while it’s running to make a creamy emulsion.
- Optionally, add an egg yolk to the mixture if desired.
- Chill the dressing in the blender carafe for at least 20 minutes to 1 hour to let the flavors meld together.
- Whiz up the dressing again before using and adjust the taste if necessary.
- Assemble torn lettuce, croutons, and bacon bits in a very large bowl.
- Gradually add the dressing to the salad, tossing it until everything is evenly coated.
- Present the salad with a sprinkle of extra cheese and pepper, if desired.
Additional Tips:
- For an extra special touch, cube and toast any leftover bread like sourdough, pumpernickel, or Italian bread into about 1-inch cubes.
- Toast the bread cubes in the oven on a cookie sheet until golden brown and crispy.
- After frying the bacon bits, reserve a tablespoon of bacon drippings in the frying pan.
- Add another tablespoon or so of butter and a little seasoning salt to the reserved drippings.
- Toss the toasted bread cubes in the flavorful drippings until coated, then let them cool slightly before tossing them onto the salad.
