Ingredients:
- 12 egg roll wrappers
- 10 oz firm tofu, drained and cubed
- 1 tbsp ginger, minced
- 1 green onion, finely chopped
- 1 cup Chinese cabbage, shredded
- 1/2 cup cabbage, shredded
- 1 1/2 cups fresh mushrooms, chopped
- 1/2 cup all-purpose flour
- 1 cup water
- Oil for frying
Instructions:
-
Prepare Tofu:
- Place the square of tofu between layers of paper towels and let it drain for 15 minutes. Once drained, cut it into 1/2 inch cubes.
-
Stir-Fry Vegetables:
- Heat 1 tablespoon of oil in a wok or skillet until hot.
- Add minced ginger, chopped green onion, and shredded cabbage to the hot oil. Stir-fry for about 1 minute.
- Incorporate the chopped mushrooms and cubed tofu into the wok. Gently stir-fry for another minute.
- Remove the mixture from the wok and drain it in a colander for an additional 15 minutes to remove excess moisture.
-
Prepare Egg Roll Wrappers:
- In a small bowl, mix together the all-purpose flour and water to create a sealer for folding the egg rolls.
- Keep the egg roll wrappers under a damp towel to prevent them from drying out as you assemble the egg rolls.
-
Assemble Egg Rolls:
- Lay one egg roll wrapper on a clean surface with one corner facing you.
- Place approximately 3 tablespoons of the tofu-vegetable filling in the center of the wrapper.
- Fold the bottom corner of the wrapper over the filling.
- Moisten the left and right corners of the wrapper with the prepared sealer, then fold them towards the center, sealing them to the bottom corner.
- Brush some of the sealer onto the top corner edges of the wrapper.
- Roll the egg roll away from you, enclosing the filling tightly.
- Press the top corner onto the egg roll to seal it, similar to sealing an envelope.
- Repeat the process for each egg roll.
-
Fry Egg Rolls:
- Pour oil into a wok or Dutch oven, about 3 inches deep, and heat it to 375 degrees Fahrenheit.
- Fry the assembled egg rolls in batches of 3 or 4 at a time, turning them once, until they are golden brown.
- Once fried, transfer the egg rolls to a paper towel-lined plate to drain off any excess oil.
- Keep the cooked egg rolls warm in a 250-degree Fahrenheit oven while you fry the remaining batches.
-
Serve and Enjoy!
- Once all the egg rolls are fried, serve them hot with your favorite dipping sauce or enjoy them on their own as a delicious snack or appetizer.
