  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 2 teaspoons lemon juice
  • 2 cups whole wheat pastry flour
  • 1 cup cream cheese
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 1 cup sliced strawberries
  • 1 cup halved green grapes
  • 1 cup halved red grapes
  • 1/2 cup apricot preserves

Instructions:

  1. In a large bowl, beat together the butter and 1/2 cup of honey until well combined.
  2. Add the egg, 1/2 teaspoon of vanilla extract, and lemon juice to the mixture, and continue beating until smooth.
  3. Sift the whole wheat pastry flour into the liquid ingredients, and stir until a dough forms.
  4. Shape the dough into a ball, wrap it in plastic wrap, and chill in the refrigerator for 1 hour.
  5. Preheat your oven to 350°F (175°C).
  6. Butter a 12-inch pizza pan to prevent sticking.
  7. Press the chilled cookie dough into the prepared pan, trimming any excess dough from the edges, and use a fork to prick the dough all over.
  8. Bake the crust on the middle shelf of the preheated oven for 15 to 20 minutes, or until lightly browned.
  9. Allow the crust to cool thoroughly in the pan before proceeding.
  10. In another bowl, beat together the cream cheese, 1 tablespoon of honey, and 1 teaspoon of vanilla extract until smooth and creamy.
  11. Spread the cream cheese mixture evenly over the cooled cookie crust.
  12. Arrange the sliced strawberries, halved green grapes, and halved red grapes on top of the cream cheese layer in an attractive design.
  13. In a small pan, heat the apricot preserves until melted and slightly runny.
  14. Brush the melted apricot preserves lightly over the arranged fruit.
  15. Chill the completed tart in the refrigerator before serving for best results.
