Sweet Onion Pizza Recipe π
Preparation Time: 3 hours
Cooking Time: 15 minutes
Total Time: 3 hours 15 minutes
Description:
Inspired by the delightful pages of “Gastronomy of Italy” by Anna Del Conti, this Sweet Onion Pizza is a savory marvel. The pizza dough, straight from the pages of the book, yields enough for two pizzas, though the option of using a store-bought base existsβit’s just not quite as exciting! π The toppings are elegantly simple, as the flavorful onions take center stage. A sprinkle of cheese was added, per the insistence of a friend, who claimed a pizza without cheese isn’t quite a pizza. Though sparingly used here, it does add that perfect touch of yumminess! π§

Instructions:
-
Prepare the Dough:
- Place the flour on a clean work surface, mixing in the yeast and salt to combine.
- Create a well in the center of the flour mixture.
- Pour the olive oil into the well and add about 200ml (1 cup) of body temperature water.
- Slowly incorporate the flour from the inner side of the well into the liquid, adding more water as needed until a thick dough forms.
- Knead the dough for approximately 10 minutes until smooth, then divide it into 2 balls.
- Place each dough ball in an oiled bowl, covering with a damp cloth.
- Allow the dough to rise in a warm spot for about 2 hours.
-
Prepare the Toppings:
- Heat a little oil in a pan over medium heat.
- Add the thinly sliced onions, a pinch of salt, and sugar to the pan.
- Cover the pan, reduce the heat, and stir occasionally until the onions turn a lovely uniform brown color.
- Add the diced bacon, chopped red capsicum, and tomato paste to the pan, cooking for a few more minutes.
- Season the mixture with oregano and adjust the seasoning to taste.
-
Assemble and Bake:
- Preheat your oven to its highest temperature and oil and flour 2 pizza trays.
- Once the dough has risen, punch it down and briefly knead.
- Roll and stretch each dough ball into the desired shape and size, leaving a small rim around the edge.
- Transfer the shaped dough onto the prepared pizza trays.
- Spread the sweet onion and bacon mixture evenly over the pizza bases, leaving a 2cm (1/2 inch) crust around the edges.
- Slice the cheese into thick triangles and arrange them on top of the pizza.
- Bake the pizzas in the preheated oven for about 12-15 minutes or until the crust is golden brown and the cheese is bubbly and lightly browned.
-
Serve and Enjoy!
- Remove the pizzas from the oven and let them cool slightly before slicing.
- Serve hot, savoring each bite of the deliciously caramelized onions, savory bacon, and melty cheese on a perfectly crisp crust.
