Ingredients:

1/2 cup Sugar

125g Dark chocolate
3 Eggs

1 cup Sour cream
1 1/2 cup Plain flour
1/2 cup Sugar (for meringue)
Salt (for frosting)
125g Icing sugar

Instructions:

  1. Prepare the Chocolate Mixture:

    • Stir hot coffee gradually into the cocoa until well combined.
  2. Cream Butter and Sugar:

    • In a mixing bowl, combine 1 1/4 cups of sugar with the butter, egg yolks, salt, vanilla, and half of the cocoa mixture.
    • Beat the mixture until it becomes light and creamy.
  3. Prepare Sour Cream Mixture:

    • Mix the bicarbonate of soda and sour cream together until well combined.
  4. Combine Dry and Wet Ingredients:

    • To the butter and sugar mixture, add the sour cream mixture and the remaining coffee-cocoa mixture alternately with sifted flour.
    • Stir until everything is well combined.
  5. Prepare the Meringue:

    • In a separate bowl, beat the egg whites until soft peaks form.
    • Gradually add the 1/2 cup of sugar while beating, until the meringue stands in stiff peaks.
  6. Fold in the Meringue:

    • Pour the batter into a deep 23cm (9 inch) or 25cm (10 inch) greased and lined cake tin.
