  • Lea & Perrins Worcestershire Sauce

1 In an oven and hob proof casserole, bring to the boil the stock, potatoes, onions, and carrots. Season with a good pinch of salt and pepper to taste.
2 Simmer the mixture for around 30 minutes, stirring occasionally, or until the potatoes are well cooked. Some of them should ‘fall’ to thicken the gravy.
3 Add the Lea & Perrins Worcestershire Sauce and corned beef to the casserole. Stir and continue cooking for another 5-10 minutes.
4 Now, let’s make the pastry. Rub the butter into the self-raising flour. Add a pinch of salt and the suet, then stir to combine.
5 Gradually add cold water to the mixture, mixing with a fork and then your hands, until it forms a soft, pliable dough. Refrigerate the dough for ease of handling.
6 Roll out the pastry on a floured surface to roughly fit the top of the casserole. Place it on top and fold over any edges, aiming for a rustic appearance.
7 For an extra touch, brush the pastry with milk or egg if desired.
8 Bake the pie in a hot oven until the crust is crisp, golden, and bubbling around the edges.
9 Once done, remove from the oven and allow it to cool slightly before serving.
