Description:

Everyone tells me that you can’t make good low-fat biscuits, but I think that this recipe proves them wrong. These are tender, but hearty with a little whole wheat flour.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat pastry flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2/3 cup nonfat plain yogurt
  • 1 tablespoon oil (your preferred type)

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C).

  2. Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, whole wheat pastry flour, baking powder, and salt.

  3. Combine Wet Ingredients: In a separate bowl, whisk together the nonfat plain yogurt and oil until well blended.

  4. Blend Ingredients: Gradually add the yogurt mixture to the dry ingredients, stirring until just combined. Be careful not to overmix; the dough should be moistened but still slightly lumpy.

  5. Form the Dough: Turn the dough out onto a floured surface. Gently pat it into a circle about 3/4-inch thick.

  6. Cut into Wedges: Using a sharp knife or a pizza cutter, cut the dough circle into eight wedges.

  7. Arrange on Baking Sheet: Place the wedges on an oiled baking sheet or a baking stone, leaving some space between each biscuit.

  8. Bake: Transfer the baking sheet to the preheated oven and bake for about 20 minutes, or until the biscuits are golden brown on top and a knife inserted into the center comes out clean.

  9. Serve: Remove the biscuits from the oven and allow them to cool slightly before serving. Enjoy them warm with your favorite spread or as a side to your favorite dish.

These low-fat yogurt biscuits are not only delicious but also a healthier alternative to traditional biscuits. They’re perfect for breakfast, brunch, or as a wholesome snack any time of the day!
