Description:
When I was pregnant with my first daughter 26 years ago, my favorite aunt, Aunt Grace, made this delicious cauliflower salad for me almost every week! I’m not sure where she got the recipe, but it has been a beloved family favorite ever since. I still make it at least once a month because it’s just that good! This salad can last for several days in the fridge (if I can resist devouring it all at once!). The trickiest part of this recipe is breaking the cauliflower into very small floretsโthe smaller, the better, for a perfect salad texture.
Ingredients:
- 1 head cauliflower
- 3 carrots
- 3 celery ribs
- 1/2 cup celery leaves
- 1/2 cup white vinegar
- 1/4 cup water
- 1/4 cup sugar
- 1/4 teaspoon seasoning salt
- 1 green bell pepper, chopped (optional)
- 1/2 cup sliced black olives (optional)
Instructions:
Step | Instructions |
---|---|
1 | In a large bowl, mix together the cauliflower florets, sliced carrots, chopped celery ribs, and optional bell pepper. If using, add the sliced black olives as well. ๐ฅ๐ฅฆ |
2 | In a covered blender, blend the celery leaves, white vinegar, water, sugar, and seasoning salt until the celery leaves are finely chopped into tiny flecks. ๐ฟ๐ถ |
3 | Pour the blended mixture over the vegetables in the large bowl, tossing everything together to mix well. ๐ฅ๐ถ๏ธ |
4 | Cover the bowl and refrigerate the salad for at least 8 hours, or overnight if possible. This marinating time allows the flavors to meld beautifully. โ๏ธโฐ |
5 | Serve chilled as a refreshing side dish or a light lunch option. Enjoy the crispness of the vegetables and the tangy, sweet dressing! ๐๐ฅ |
Tips:
- For the best results, break the cauliflower into very small florets. The smaller they are, the better the texture of the salad!
- Feel free to customize this salad with your favorite veggies. Green peas, cherry tomatoes, or red onions can be delightful additions!
- Make sure to refrigerate the salad for at least 8 hours before serving to allow the flavors to develop fully.
