Ingredients:

Bottom Layer Middle Layer – Cappuccino Middle Layer – Cherry Middle Layer – Peppermint Top Layer
1/2 cup butter 1/2 cup butter 1/2 cup butter 1/2 cup butter 4 oz chocolate
1/4 cup sugar 1 tsp instant coffee granules 1 tbsp maraschino cherry juice 1 tbsp milk 2 tbsp margarine
1/3 cup graham cracker crumbs 1 tbsp hot water 1/2 tsp almond flavoring 1/2 tsp peppermint extract
1 cup coconut 1 tsp vanilla 1 1/2 cups icing sugar 1 1/2 cups icing sugar
1 3/4 cups walnuts 3 cups icing sugar 1/4 cup maraschino cherries
2 tbsp butter

Instructions:

  1. Bottom Layer:

    • Heat butter, sugar, and graham cracker crumbs in a double boiler until butter melts.
    • Add egg and stir until boiling and thickened.
    • Remove from heat and mix in coconut and walnuts.
    • Press firmly into an ungreased foil-lined 9×9 inch pan.
  2. Middle Layer – Cappuccino:

    • Dissolve coffee granules in hot water and let it cool.
    • Beat butter, vanilla, and cooled coffee until combined.
    • Gradually beat in icing sugar until smooth.
    • Spread the mixture evenly onto the bottom layer and let it stand for 10 minutes before smoothing it out.
  3. Middle Layer – Cherry:

    • Beat butter, cherry juice, almond flavoring, and icing sugar together until combined.
    • Drain cherries and stir them into the sugar mixture.
    • Drop spoonfuls of the mixture onto the cappuccino layer and spread evenly.
    • Allow it to stand for 10 minutes before smoothing it out.
  4. Middle Layer – Peppermint:

    • Beat butter, milk, peppermint, and sugar together in a medium bowl.
    • Add food coloring until the desired color is achieved.
    • Drop spoonfuls onto the cherry layer and spread evenly.
    • Let it stand for 10 minutes before smoothing it out.
  5. Top Layer:

    • Melt chocolate and margarine in a double boiler until smooth.
    • Let it cool slightly but still runny.
    • Spread it evenly over the peppermint layer.
    • Chill the bars until set.
