Prepare Couscous:
- Place the couscous in a bowl.
- Add 1 cup (250ml/8fl. oz) of boiling water.
- Let it stand for 10 minutes until the water is absorbed.
- Fluff up with a fork.

Cook Eggplant:
- Heat 2 tablespoons of olive oil in a large fry pan.
- Fry the eggplant until soft and golden.
- Transfer the eggplant to a bowl.

Prepare Vegetable Mixture:
- In the same pan, heat 1 tablespoon of olive oil.
- Add onion, garlic, ground cumin, and ground coriander.
- Cook over medium heat for 4 minutes until soft.
- Add the cooked mixture to the bowl with the eggplant.

- Using the remaining oil, cook the red capsicum for 5 minutes until soft.
- Add the capsicum to the bowl with the other vegetables.

- Season to taste and mix thoroughly.
