Description

🇩🇰 A delightful Danish treat straight from the recipe book of one of my daughter’s friends’ moms! Living in a community with a vibrant Scandinavian influence, these Aebleskivers are a breakfast staple often found at church gatherings. Light, fluffy, and just a tad sweet, they’re perfect when drizzled with a fruit-flavored syrup! 🍓🥞

Ingredients

  • 2 cups buttermilk
  • 2 cups flour
  • 3 eggs, separated
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Prepare the Egg Whites:

    • Start by separating the egg whites into a small bowl and set them aside for later.
  2. Mix Dry Ingredients:

    • In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. Mix well to ensure even distribution of the leavening agents.
  3. Combine Wet Ingredients:

    • In another bowl, whisk together the buttermilk and egg yolks until smooth and creamy.
  4. Blend Wet and Dry:

    • Gradually add the buttermilk mixture to the dry ingredients, stirring gently until you have a smooth batter. Make sure there are no lumps!
  5. Whip the Egg Whites:

    • In a separate clean bowl, beat the egg whites until soft peaks start to form. Gradually add in the sugar while continuing to beat until you have glossy, stiff peaks.
  6. Fold in Egg Whites:

    • Carefully fold the whipped egg whites into the batter using a spatula. This will ensure your Aebleskivers are light and airy.
  7. Cooking Aebleskivers:

    • Heat your Aebleskiver pan over medium heat and lightly grease each well with butter or cooking spray.
    • Pour batter into each well, filling them about three-quarters full.
    • Cook until the bottoms are golden brown, about 2-3 minutes.
    • Using a skewer or fork, gently flip each Aebleskiver over to cook the other side until golden brown and cooked through, about 2-3 minutes more.
    • Transfer the cooked Aebleskivers to a plate and repeat with the remaining batter.
  8. Serve and Enjoy!

    • 🍓 Drizzle with your favorite fruit-flavored syrup or dust with powdered sugar before serving.
    • 🥞 Serve warm and watch them disappear quickly! These are best enjoyed fresh off the pan.

Recipe Notes:

  • Aebleskivers are traditionally cooked in a special pan with round wells. If you don’t have an Aebleskiver pan, you can try using a cake pop maker or even a mini-muffin tin.
  • Be gentle when folding the egg whites into the batter to keep the Aebleskivers light and fluffy.
  • These Aebleskivers are best enjoyed fresh, but you can store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the oven or toaster oven for a crispy texture.
