Cook Time: 35 minutes
Servings: 6

Ingredients:

Quantity Ingredient
1/2 Onion
1 Garlic clove
3 tbsp Butter
3 tbsp Margarine
1/2 cup All-purpose flour
1 1/2 Tomatoes
1/2 cup Water
2 Green peppers
1 Bay leaf
1 tsp Oregano
1 tsp Dried thyme
1/2 tsp Salt
1/4 – 1/2 Hot sauce
2 cups Fresh okra
2 cups Frozen okra
1 Shrimp
1 Crab meat
Rice (for serving)

Directions:

  1. Prepare Ingredients:

    • Finely chop the onion and mince the garlic.
    • Cut the green peppers into small pieces.
    • Dice the tomatoes.
    • Rinse the okra and cut off the ends.
  2. Cook Aromatics:

    • In a large pot or Dutch oven, melt the butter over medium heat.
    • Add the chopped onion and minced garlic, cooking until the onion becomes tender and translucent, stirring occasionally.
  3. Add Flour:

    • Stir in the all-purpose flour, ensuring it coats the onions and garlic evenly.
    • Continue cooking, stirring constantly, until the flour develops a rich, brown color, creating a flavorful roux.
  4. Incorporate Ingredients:

    • Add the diced tomatoes, water, green peppers, bay leaf, oregano, dried thyme, salt, and hot sauce to the pot, stirring to combine.
    • Increase the heat and bring the mixture to a boil.
  5. Simmer Gumbo:

    • Once boiling, reduce the heat to low and cover the pot, allowing the flavors to meld together as the gumbo simmers gently for about 20 minutes.
    • After 20 minutes, remove the bay leaf from the pot.
  6. Add Okra:

    • Stir in the fresh and frozen okra, ensuring they are well incorporated into the gumbo.
    • Bring the mixture back to a boil, then reduce the heat and let it simmer for an additional 5 minutes, allowing the okra to cook through.
  7. Incorporate Seafood:

    • Gently fold in the shrimp and crab meat, allowing them to cook in the flavorful broth.
    • Continue cooking for approximately 5 minutes, or until the shrimp are pink and opaque, and the crab meat is heated through.
  8. Serve:

    • Ladle the hot gumbo over cooked rice in individual serving bowls.
    • Optionally, mound the rice in heated soup plates and spoon the gumbo around it for a traditional presentation.
