Ingredients:

For the Meringues:

  • 5 egg whites
  • 1 1/4 cups caster sugar

For the Raspberry Mousse:

  • 400g raspberries
  • 1/3 cup caster sugar
  • 2 tablespoons Cointreau liqueur
  • 1 tablespoon gelatin
  • 1/4 cup water
  • 300ml cream

For the Raspberry Lime Sauce:

  • 200g raspberries
  • 1/4 cup icing sugar
  • 1/4 cup water
  • 1 tablespoon lime juice

Instructions:

Meringues:

  1. Cover 2 oven trays with parchment paper and mark 6 x 9cm circles on the paper.
  2. In a mixing bowl, beat the egg whites until soft peaks form, gradually adding the caster sugar until fully dissolved.
  3. Transfer the meringue mixture into a large piping bag fitted with a large flute nozzle.
  4. Pipe the meringue mixture over the marked circles on the parchment paper to form the base, then build up another 5cm height around the sides to create cases.
  5. Bake the meringues in a very slow oven until they are firm to the touch, rotating the trays halfway through the cooking process for even baking.
  6. Allow the meringues to cool with the oven door slightly ajar.

Raspberry Mousse:

  1. In a blender, combine the raspberries, caster sugar, and Cointreau liqueur, blending until smooth. Strain the mixture through a sieve into a bowl.
  2. Sprinkle the gelatin over the water in a cup and let it stand in a small pan containing simmering water. Stir until the gelatin is fully dissolved, then allow it to cool.
  3. Mix the cooled gelatin into the raspberry mixture.
  4. In a separate bowl, whip the cream until soft peaks form, then fold it into the raspberry mixture in two batches.
  5. Cover the raspberry mousse mixture and refrigerate it until set.
  6. Gently whisk the set raspberry mousse mixture and transfer it into a piping bag fitted with a large flute nozzle. Pipe the mousse into the prepared meringue cases.

Raspberry Lime Sauce:

  1. For the sauce, simply blend together the raspberries, icing sugar, water, and lime juice until smooth.
