Ingredients:
- 1/2 cup quinoa
- 4 green bell peppers
- 1 onion
- 1 cup mushrooms
- 8 ounces frozen corn kernels
- 1 can corn kernels
- 1 bunch fresh coriander (cilantro)
- 2 tablespoons soy sauce
- 1 tablespoon fresh garlic
- 2 teaspoons red pepper flakes
- 1 tablespoon sesame oil
- Bread crumbs for sprinkling
Instructions:
- Prepare Quinoa: Rinse quinoa under cold water and drain well.
- Cook Quinoa: In a saucepan, bring 1 cup of water to a boil. Stir in quinoa, reduce heat, cover, and simmer for 15 minutes or until the water is absorbed and quinoa is translucent.
- Prep Peppers: Cut 1/2-inch off the tops of green peppers and remove seeds.
- Blanch Peppers: In a large saucepan filled with boiling water, cook peppers for 5 minutes or until tender-crisp. Remove from water and drain well, upside down.
