Ingredients:

  • 1/2 cup quinoa
  • 4 green bell peppers
  • 1 onion
  • 1 cup mushrooms
  • 8 ounces frozen corn kernels
  • 1 can corn kernels
  • 1 bunch fresh coriander (cilantro)
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh garlic
  • 2 teaspoons red pepper flakes
  • 1 tablespoon sesame oil
  • Bread crumbs for sprinkling

Instructions:

  1. Prepare Quinoa: Rinse quinoa under cold water and drain well.
  2. Cook Quinoa: In a saucepan, bring 1 cup of water to a boil. Stir in quinoa, reduce heat, cover, and simmer for 15 minutes or until the water is absorbed and quinoa is translucent.
  3. Prep Peppers: Cut 1/2-inch off the tops of green peppers and remove seeds.
  4. Blanch Peppers: In a large saucepan filled with boiling water, cook peppers for 5 minutes or until tender-crisp. Remove from water and drain well, upside down.
