Ingredients:

  • Mashed potatoes
  • Potatoes
  • Cabbage
  • Onion
  • Salt
  • Pepper
  • Butter

Instructions:

  1. Prepare Fresh Ingredients:

    • If cooking fresh, start by boiling some potatoes, green cabbage, and onion together until tender. Then, drain them well. No need to mash the ingredients; just let them cook together.
  2. Brown in Butter:

    • Melt some butter in a pan. (You can add black pepper at this stage; salt is usually added when cooking the potatoes.) Once the butter is bubbling, add the boiled mixture to the pan.
  3. Cook Until Golden:

    • Press down the mixture in the pan and let it brown nicely on one side. Then, flip it over or stir it around until it reaches your desired level of crispiness. The key is to achieve a beautiful golden brown color!
  4. Using Leftover Mashed Potatoes:

    • If you’re using leftover mashed potatoes with butter already added, there’s no need to add more butter. Simply brown the mixture slowly to your taste, ensuring not to burn it. You can even shape it into patties and freeze them for later use.
  5. Serving Suggestions:

    • Bubble & Squeak is traditionally served as part of a British breakfast spread, alongside eggs, bacon, and sausages. However, it’s also delicious with a thick slice of real home-cured ham, a poached egg or two, and even pickles for added flavor.
  6. Quick Hash Variation:

    • For a quick hash variation, add some cubed corned beef and a generous dash of Worcestershire sauce to the mixture. Worcestershire sauce adds depth of flavor, but if unavailable, a little soy sauce or mushroom condiment can suffice. However, there’s no substitute for the authentic Lea & Perrins Worcestershire sauce!
  7. Corned Beef Hash:

    • If serving as a corned beef hash, simply place a poached egg or two on top (fried eggs are also an option), and serve with a good strong coffee or lemon tea for an energizing breakfast that will fuel your day.

Enjoy your Bubble & Squeak! 🍽✨
