Chicken Bacon Rolls in Creamy Basil Sauce

Description: Tender chicken breasts rolled with bacon and Swiss cheese, enveloped in a tantalizing creamy basil sauce. This dish is easy enough for family dinners yet elegant enough for entertaining guests. Serve with thin noodles, small boiled new red potatoes, or steamed spinach for a complete meal.

Ingredients:

Quantity Ingredient
4 boneless skinless chicken breast halves
4 bacon
4 tbsp canola oil
2 tbsp all-purpose flour
1/2 cup milk
1/2 cup chicken broth
1/2 cup heavy whipping cream
1 pimientos
1 cup parmesan cheese
1/2 cup fresh basil
1/4 tsp salt
pepper

Instructions:

For Chicken:

  1. Place each chicken breast between 2 sheets of plastic wrap and, using a meat pounder, pound until 1/4 inch thick.
  2. Place 1 slice of Swiss cheese and 1 slice of bacon on top of each breast half.
  3. Fold the sides in toward the center and then, starting at the bottom end, roll up tightly. Secure with toothpicks.
  4. Preheat the oven to 425°F (220°C).
  5. Heat canola oil in a frying pan over medium-high heat. While the oil is heating, put milk and flour in separate shallow bowls.
  6. Dip chicken rolls in milk, then coat them in flour, coating lightly and evenly.
  7. Add the chicken to the pan and brown lightly on all sides, approximately 5-7 minutes. Save pan drippings and pan for sauce.
  8. Using a slotted spatula, transfer the chicken to a baking dish. Place in the center of the oven and immediately reduce the heat to 375°F (190°C). Bake until cooked through, 10-12 minutes.
  9. Let stand for a few minutes, then remove the toothpicks.

For Sauce:

  1. While the chicken is baking, in the same frying pan you browned the chicken in, add chicken broth and bring to a boil over medium heat, loosening browned bits from the pan.
  2. Stir in cream and pimientos, bring to a boil over medium heat, stirring for 1 minute.
  3. Reduce heat, add parmesan cheese, basil, salt, and pepper to taste. Cook, stirring until heated through.
  4. Pour the sauce over the chicken and serve hot.
