Description

My husband sampled these delightful Butter-Rum Sandwich Cookies at a housewarming party last weekend, where the hostess promised to share her coveted recipe, especially after seeing Chris indulge in so many of them! Last night, out of the blue, she called with her secret formula in hand. These cookies have a rich buttery flavor with a hint of rum, perfectly sandwiched between two tender cookies. I hope you enjoy them just as much as Chris does! 🎉

Ingredients

For the Cookies For the Frosting
1/2 cup powdered sugar 1/4 cup butter
1/3 cup pecans 3 cups powdered sugar
1 cup butter 1/4 cup light rum
2 tbsp light rum 2 tbsp half-and-half (or more)
1/2 tsp vanilla extract
2 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
3/4 cup sugar

Instructions

  1. Prepare the Cookies:

    • In a food processor with a metal blade, combine the powdered sugar and pecans.
    • Process until the pecans are finely chopped, about 45-60 seconds.
    • In a large bowl, cream together the sugar mixture, butter, rum, and vanilla using an electric mixer on medium speed until creamy, scraping the sides of the bowl often. This should take about 2-3 minutes.
    • Reduce the mixer speed to low and add the flour, baking powder, and salt. Mix until well combined, about 1-2 minutes.
    • Divide the dough in half and shape each piece into a 10-inch long roll on a lightly floured surface.
    • Flatten the sides to form a triangle on a sheet of waxed paper, using the paper to help create the shape.
    • Wrap each half in plastic wrap and refrigerate until firm, approximately 2 hours.
  2. Bake the Cookies:

    • Preheat your oven to 375°F (190°C).
    • Cut each dough log into 1/4-inch slices and place them 1 inch apart on ungreased cookie sheets.
    • Sprinkle the cookies with pearl sugar and bake for 9-11 minutes or until the edges begin to brown.
    • Transfer the cookies to wire racks and allow them to cool completely.
  3. Make the Frosting:

    • In a small bowl, combine all the frosting ingredients except the half-and-half.
    • Beat with an electric mixer on low speed, adding enough half-and-half for the desired spreading consistency.
  4. Assemble the Sandwich Cookies:

    • For each sandwich cookie, spread 3/4 teaspoon of frosting on the bottom of a cookie (sugar side down).
    • Top with a second cookie (sugar side up) and gently squeeze together.
    • Repeat until all cookies have been assembled into delicious sandwich cookies.
