– In a bowl, mix oats and oat bran.
– Cut in butter and applesauce using a pastry blender until it resembles coarse meal.
– Add water and stir until just moistened.
– Shape the mixture into a ball between two sheets of wax paper.
– Roll it out into a 10-inch circle.
– Remove the top sheet of wax paper.
– Transfer the crust into a 9-inch pie plate coated with cooking spray.
– Bake at 375°F (190°C) for 7 minutes.
– Let it cool on a wire rack.
2 Prepare the Quiche Filling:
– Lower the oven temperature to 325°F (163°C).
– In a large frying pan, cook the eggplant, tomatoes, and garlic until softened.
– Add in the zucchini, squash, spinach, mushrooms, onion, basil, oregano, salt, pepper, and Worcestershire sauce.
– Blend well and cook until most of the liquid has evaporated.
– Set the vegetable mixture aside in a large bowl to cool.

– Pour in the remaining vegetable mixture.
– Top with the rest of the mozzarella cheese.
