Curt’s Playoff Jambalaya 🏈πŸ₯˜

Description: Good things come to those who wait. Let this cook during the game, and it should be ready when the games’ over.

  • Preparation Time: 45 minutes
  • Cooking Time: 2 hours
  • Total Time: 2 hours 45 minutes
  • Servings: 8

Ingredients:

Quantity Ingredient
2 Chicken breasts
1 Sweet onion
4 cloves Garlic
2 cups Tomato sauce
2 cups Rice
2 tbsp Butter
1 can Beer
1 Green bell peppers
2 cans Stewed tomatoes
2 cans Kidney beans
To taste Crushed red pepper flakes
To taste Paprika

Instructions:

  1. In a large stockpot, sautΓ© onions and peppers until onions are soft.

  2. In a skillet, brown the chicken.

  3. When nearly done, add the sausage, to brown, even if it is already cooked.

  4. Add cooked meats to the stockpot.

  5. Add tomato sauce, tomatoes, jalapenos (uncooked), kidney beans, chicken stock, crushed red pepper, hot sauce, and beer, and cook on medium for 20 minutes to blend flavors.

  6. Turn mixture to “high” until a boil is achieved.

  7. Boil for 5 minutes.

  8. Add rice, and turn to low.

  9. Cook until rice is done AND you reach desired consistency.

  10. Should be about 45-60 minutes, perhaps more.

  11. Water may be substituted for the chicken stock.

  12. I just like the extra flavor it adds.
