Ingredients:

  • 4 Cornish game hens
  • 4 sprigs of rosemary
  • 20-25 cloves of fresh garlic
  • 1 lemon
  • 1/3 cup olive oil
  • 1/3 cup chicken broth
  • 1/3 cup dry white wine
  • Salt and pepper to taste

Instructions:

Step Description
1 Preheat Oven: Heat oven to 450Β°F (230Β°C).
2 Prepare Hens: Rinse and pat dry the Cornish game hens. Season cavities lightly with salt and pepper.
3 Prep Lemon: Cut lemon into 4 wedges.
4 Stuff Hens: Place 1 lemon wedge, 1 sprig of rosemary, and 1 clove of peeled garlic inside each hen. Rub outside of hens with 1 tablespoon of olive oil. Season outside of hen lightly with salt and pepper.
5 Arrange in Pan: Place hens in a roasting pan and scatter peeled garlic cloves around them.
6 Initial Roasting: Roast hens for approximately 25 minutes at 450Β°F (230Β°C).
7 Add Liquids: Reduce the oven temperature to 350Β°F (175Β°C). Pour wine, chicken broth, and remaining olive oil over the hens.
8 Continue Cooking: Continue to cook for about 25 minutes more, or until the juice from the thickest part of the hen runs clear. Baste the hens every 10 minutes during this final cooking time.
9 Make Sauce: Remove hens from the pan and pour remaining juices, including any from the cavities, into a medium saucepan. Boil the juices for about 6 to 8 minutes, or until desired consistency is reached.
10 Serve: Arrange hens on plates and spoon sauce and garlic over and around each. Add additional rosemary as a garnish if desired.
11 Optional Serving: You can cut the hens in half to double the servings. This dish pairs well with a light salad and rice pilaf, along with a glass of wine.
