Highland Chicken Recipe

Description: This is our favorite chicken dish! There is something about the cream sherry marinade that makes this chicken absolutely fabulous. The chicken develops a very complex flavor and the sauce is wonderfully tasty. The sauce is lovely made with either the cream or the low-fat milk/water option. Since we don’t usually have heavy cream on hand, the low-fat option was born and I am very happy with the result. Hope you enjoy this dish as much as we do.

Ingredients:

Ingredient Quantity
Cream sherry 1/2 cup
Garlic 1 clove
Dried thyme 1 tsp
Salt 1/4 tsp
Pepper 1/4 tsp
Boneless chicken breasts 2
Butter 2 tbsp
Water 2 tbsp
Heavy cream (or low-fat milk/water alternative) 1/4 cup

Instructions:

  1. Marinade Preparation: In a shallow pan, combine the cream sherry, minced garlic, dried thyme, salt, pepper, and a drizzle of oil to make the marinade. Mix well to ensure all flavors are evenly distributed.

  2. Marinating the Chicken: Add the boneless chicken breasts to the marinade, ensuring they are fully coated. Cover the pan and refrigerate for at least 30 minutes to allow the flavors to penetrate the chicken.

  3. Cooking the Chicken: After marinating, melt butter in a frying pan over medium-high heat. Once the butter is sizzling, add the marinated chicken breasts. Quickly brown them on both sides, then lower the heat to medium-low, cover, and cook for 15-20 minutes until the chicken is cooked through and no longer pink in the middle.

  4. Deglazing the Pan: Transfer the cooked chicken to serving plates and set aside. In the same pan, add water to deglaze it, scraping up any browned bits from the bottom to incorporate into the sauce.

  5. Preparing the Sauce: Pour any remaining marinade into the pan with the deglazed juices. Bring the mixture to a boil, ensuring it reaches a safe temperature since it contained raw chicken. Allow the sauce to simmer until it has reduced by half, which should take at least 5 minutes.

  6. Adding Cream/Milk: Once the sauce has reduced, stir in the heavy cream or low-fat milk/water alternative. Heat the sauce through until it is warmed.

  7. Serving: Pour the creamy sauce over the cooked chicken breasts, ensuring they are generously coated. Serve the Highland Chicken alongside your choice of noodles or rice and some deliciously roasted seasonal vegetables for a complete and satisfying meal.

This recipe promises to elevate your chicken dinner experience to new heights, with its rich flavors and creamy texture. Whether you’re cooking for a special occasion or simply craving a comforting meal, Highland Chicken is sure to impress! Enjoy every mouthful of this culinary masterpiece. 🍽️🌟
