Ingredients:

3/4 tsp Baking powder
1/2 tsp Salt
1 cup Sugar
1/4 cup Butter
2 Eggs
1 1/2 cups Plain yogurt
1/4 cup Dark rum
3 tsp Vanilla extract
1/2 cup Sweetened flaked coconut
1/2 cup Sweetened flaked coconut (for topping)
1 cup Mashed bananas
1 Lime (juiced)
Confectioners’ sugar

Instructions:

  1. Preheat your oven to 350ยฐF.

  2. Prepare a loaf pan by spraying it with cooking spray.

  3. Combine flour, baking powder, and salt in a bowl. Mix well and set aside.

  4. In a large bowl, beat together sugar and butter until creamy.

  5. Add eggs to the sugar-butter mixture and beat well until fully incorporated.

  6. Mix in mashed bananas, yogurt, vanilla extract, and dark rum. Beat well.

  7. Gradually add the flour mixture to the wet ingredients, stirring until just combined.

  8. Stir in 1/2 cup of sweetened flaked coconut into the batter.

  9. Pour the batter into the prepared loaf pan, spreading it evenly.

  10. Sprinkle 1 tablespoon of sweetened flaked coconut over the top of the batter.

  11. Bake for about 1 hour or until a toothpick inserted into the center comes out clean.
